Recipe for Easy Tex-Mex Salad

Ingredients:

For the Dressing:

  • 3 tbsp lime juice

  • 2 tbsp olive oil

  • 2 tsp honey

  • 1/2 tsp chili powder

  • 1/2 tsp cumin

  • 1/4 tsp pepper

For the Salad:

  • 4 cups chopped romaine lettuce

  • 1 cup cooked quinoa (preferably cooked in low sodium vegetable broth)

  • 1 can black beans, drained and rinsed

  • 2 cups chopped tomatoes

  • 1 cup frozen corn, thawed (or fresh corn, sliced off the cobb)

  • 2 green onions, minced

  • 1/2 cup fresh cilantro, minced (optional)

  • 1 avocado, chopped

  • 1 cup grated cheddar cheese


Method:

  1. Prepare the Dressing: In a small bowl or mason jar, combine lime juice, olive oil, honey, chili powder, cumin, and pepper. Mix well until combined. Set aside.

  2. Assemble the Salad: In a large bowl, layer the chopped romaine lettuce as the base. Next, add the cooked quinoa, black beans, chopped tomatoes, and thawed corn on top of the lettuce.
