Recipe for Easy Tex-Mex Salad

Servings: 4-6 servings

Total Time: 30 minutes

For the Dressing:

  • 3 tbsp lime juice

  • 2 tbsp olive oil

  • 2 tsp honey

  • 1/2 tsp chili powder

  • 1/2 tsp cumin

  • 1/4 tsp pepper

For the Salad:

  • 4 cups chopped romaine lettuce

  • 1 cup cooked quinoa (preferably cooked in low sodium vegetable broth)

  • 1 can black beans, drained and rinsed

  • 2 cups chopped tomatoes

  • 1 cup frozen corn, thawed (or fresh corn, sliced off the cobb)

  • 2 green onions, minced

  • 1/2 cup fresh cilantro, minced (optional)

  • 1 avocado, chopped

  • 1 cup grated cheddar cheese

  1. Prepare the Dressing: In a small bowl or mason jar, combine lime juice, olive oil, honey, chili powder, cumin, and pepper. Mix well until combined. Set aside.

  2. Assemble the Salad: In a large bowl, layer the chopped romaine lettuce as the base. Next, add the cooked quinoa, black beans, chopped tomatoes, and thawed corn on top of the lettuce.

  3. Add Flavorful Toppings: Sprinkle minced green onions and fresh cilantro (if using) over the salad. Top with chopped avocado and grated cheddar cheese for a creamy and cheesy finish.

  4. Dress and Serve: Just before serving, drizzle the prepared dressing over the salad. Toss gently to coat. Alternatively, you can serve the dressing on the side and let everyone dress their own salad according to their taste preferences.

  5. Enjoy! Dive into this delicious Tex-Mex salad and savor the explosion of flavors with every bite. Whether you're enjoying it as a standalone meal or as a side dish, this salad is sure to be a hit.

Tips and Variations:

  • For an extra protein boost, add grilled chicken, shrimp, or tofu to the salad.

  • Feel free to customize the salad with your favorite Tex-Mex ingredients such as diced bell peppers, sliced jalapeños, or black olives.

  • If you're short on time, you can use store-bought Tex-Mex or ranch dressing instead of making the dressing from scratch.

  • Make a big batch of this salad and store it in airtight containers for quick and easy lunches throughout the week. Just remember to keep the dressing separate until you're ready to eat to keep the salad fresh and crisp.
