What kind of bread should I use for Herby Tuna Melt Sandwich?
As a Registered Dietitian, I'm all for adding more fiber to your diet! That's why I recommend using a whole grain bread with at least 3 grams of fiber per serving for this recipe. However, a good sourdough would also be delicious! Although not typically as high in fiber as whole grain breads, the fermentation process for sourdough may provide some gut-health benefits.
What kind of cheese should I use for Herby Tuna Melt Sandwich?
Honestly, almost any kind of meltable cheese will do! I love using Cheddar, Colby jack, Havarti, fontina, gouda, mozzarella, or even a mixture of any of the above. If you're looking to reduce saturated fat in your diet, choose a cheese with a lower percentage milk fat (such as Mozzarella or Swiss).

Recipe for Herby Tuna Melt Sandwich
Servings: Makes 2 servings
Prep time: 10 minutes
Cook time: 6 minutes
Total time: 16 minutes
Ingredients:
1 (12 oz) can light tuna, drained
2-3 tbsp plain Greek yogurt (or mayonnaise)
1 tsp Dijon mustard
1/2 lemon, juiced
1 tsp capers, chopped
1 stalk celery, chopped
3 tbsp fresh dill, minced
1 green onion, minced
Pinch of freshly ground pepper
1/2 cup cheese (mozzarella, cheddar, fontina, or Havarti), grated
4 slices whole grain bread
Instructions:
In a medium bowl, combine the tuna, celery, capers, dill, green onion, lemon juice, Dijon mustard, Greek yogurt, and pepper. Mix to combine with a fork or spoon. Add the grated cheese and fold into the mixture.
Spread mayonnaise on two slices of bread and then flip them over. Spoon the tuna mixture onto one half of the bread, then top with the other half, mayonnaise side up.
Carefully transfer the sandwich to a preheated pan set over medium heat. Cook until the bread is toasted and golden brown; flip and cook on the opposite side for an additional 2-3 minutes or so.
Repeat steps 2-3 with the second sandwich. Slice in half and enjoy immediately.
